Are you looking for an easy weeknight meal, or maybe a meal that you can stick in the freezer for later or share with a friend? This Friendship Casserole might just be what you are looking for!
I love to have some freezer meals tucked away in the freezer for busy times, or times when I don’t know what to fix, or just flat out don’t feel like cooking!
I discovered this recipe a while back….I’m not sure exactly where it came from, but I think it might have came from an old church cookbook. Those cookbooks are the best! You know that those are some tried and true recipe in those lovely things! Anyway, I always find myself struggling when trying to figure out what to take to a friend or family member who may be experiencing a rough patch or a joyful occasion such as the birth of a baby. er
I can remember fondly when my girls were born, several dear friends and family members showed up on my doorstep with food and it was so nice not having to worry about cooking! I’ve also heard from people that say they love meal trains during trying times, but they just can’t seem to eat all the food that is brought, so they usually put a lot of it in their freezer for later use. That is why I love this friendship casserole recipe because it makes two casseroles. One for you and one to share, or you can share both of them, or keep both of them and they freeze well! So, if your friend has an over abundance of food on their hands when you deliver it, they can just tuck it away in the freezer and enjoy it later!
Friendship Casserole
You will need:
2 lbs ground beef
1 45 ounce jar spaghetti sauce
1 16 ounce package egg noodles
1/2 Cup (1 stick) butter
2 Tablespoons sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 cup grated parmesan cheese
2 Cups Mozzarella cheese
Preheat oven to 350 degrees and grease 2 9×13 pans. If you are putting this in the freezer, I suggest using foil pans.
Brown meat, drain, and return to the pan. Add sauce and sugar and simmer for 20 minutes.
While the meat mixture is simmering, cook the noodles and drain. Toss with butter, onion powder, garlic powder, and Parmesan cheese until well coated.
In the 9×13 pans, layer 1/2 sauce mixture, followed by all of the noodles, then the rests of the sauce. Top with Mozzarella cheese. Cover and bake at 350 degrees for 40-45 minutes. If placing in the freezer, do not bake. Cover with aluminum foil and freeze up to 3 months. Thaw before baking.
Look at that cheesy goodness!
The sugar and spaghetti sauce combined add the perfect amount of sweet and savory! I hope your friends and family enjoy this! Spread the love!!! Enjoy!!
