I love cooking with peppers. They add so much flavor to any dish! I love freezing them, so I have the option to use them any time of the year! You won’t believe how easy it is to freeze peppers, so you can enjoy them anytime.
Summer is winding down and so is our garden. Our peppers seem to be the last veggie hanging on. Maybe they aren’t ready to see summer go like me.
I love the taste of chili in the winter with “fresh” garden peppers in it. They also taste great in sloppy joes and on top of brats. Put some of these bad boys on top of a brat in the dead of winter, and you’re taste buds will have you thinking its summer!
Peppers are a great veggie to have in the freezer to toss into any dish! Green bell peppers and banana peppers are my favorite to freeze because I love the flavor they add. You can also do this trick with onions too!
How to freeze peppers
Begin by removing the stems and seeds and chopping up the peppers to the desired size. I prefer small pieces. You can also slice some to add to the top of brats and hamburgers.
I love these cutting mats. They come in a pack of 4 and each one is designated for veggies, meat, chicken, and fish. They take up little space in the cabinet and they have a slightly sticky back that keeps them in place in your cabinet and they are dishwasher safe!
Line a cookie sheet with parchment paper and place a single layer of peppers on top of the parchment paper and place in the freezer for about 2 hours, maybe a little longer. There’s no set time, you just don’t want to leave them in there too long or they may get freezer burnt.
Doing this step instead of chopping and placing directly in the freezer prevents them from all sticking together. I like to use less bags and put as many that will fit into quart sized bags, so I can use as little or as much as I want.
Once they have been in the freezer for a bit, place the peppers in a freezer bag…I prefer quart size…and label. Labeling is important, especially if you have hot peppers:) Last year, my neighbor gave me some HOT peppers that looked exactly like banana peppers. Thank goodness I labeled them, or our chili would have been way too spicy to eat. Well, maybe not for me, but for everyone else in the fam!
Just a quick reminder: when chopping hot peppers, it is best to wear gloves.
Just a few simple steps to garden “fresh” peppers all year long!
