Most people have a love, hate relationship with cabbage. This recipe for Cheesy Cabbage Casserole will turn your hate into love!!!
We have a tradition on New Year’s that we get together at my in-laws and enjoy corned beef and cheesy cabbage casserole together. Enjoying cabbage on New Year’s is supposed to bring good luck in the new year. There’s usually deviled eggs and dessert also, but honestly this cheesy cabbage casserole is considered my dessert.
Honestly, you add cheese, butter, and crackers to anything and it is guaranteed to be delicioso!
This recipe, like my slow cooker beef stew, came out of this family cookbook that is quickly becoming one of my most treasured cookbooks. It is made of compiled recipes from my husband’s family. Tried and true recipes that have been enjoyed for generations, so they’re guaranteed to be good, right?!
This recipe came from my husband’s aunt who also makes the most delicious oyster dressing at Christmas. I may be the only one in my family who likes it, but that just means more for me!
Cheesy Cabbage Casserole
You will need:
4 C. chopped cabbage
4 Tablespoons butter + 2 Tablespoons for topping
3 Tablespoons flour
1 Cup milk
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 Cups grated Velveeta Cheese
1 1/2 Cups cracker crumbs, divided (I prefer Town House only because that’s usually what I have on hand because that’s usually our cracker of choice, but any will do)
Cook cabbage in water over low heat and drain.
Melt butter in sauce pan, add flour and whisk together until blended.
Add milk, salt, and pepper, stirring together to make a thin white sauce.
Once combined and heated for a few minutes over low heat, stir the sauce into the drained cabbage.
Stir in the cheese and 1/2 the cracker crumbs.
Place in a greased 2 quart baking dish and dot with cubed 2 Tablespoons of butter.
Cover with remaining cracker crumbs.
Bake at 400 degrees for 25-30 minutes or until cheese is melted.
Just look at that cheesy goodness!
So pretty, and oh so good!!
I could possibly eat this whole pan myself. Of course, my stomach would rather I didn’t, but I don’t need to listen to my stomach anyway:)
So, whatever your New Year’s tradition is even if it doesn’t involve cabbage, consider enjoying this at some point in your life. I don’t think you will regret it!
Cheesy Cabbage Casserole
