This banana salad is definitely a family favorite recipe. My husband remembered eating it when he was a kid, so he got the recipe from his mom. If he brings me a recipe that he has written himself, then I guess I better get to making it. Now, the recipe wasn’t written the way I would have wrote it…it was a little hard to decipher, but I figured it out.
This recipe really is easy to make and is a perfect accompaniment to any meal. It’s a nice balance between sweet and salty.
Banana Salad
You will need:
1 egg, beaten
1/2 Cup sugar
1 1/2 Tablespoons (heaping) flour
pinch of salt
2 Tablespoons vinegar + enough water to equal 1/2 cup liquid
1 Tablespoon butter
8 oz. cool whip
Bananas, sliced (as many or as few as you would like)
Cook the egg, sugar, flour, salt, and vinegar/water mixture under med/high heat.
Stir the mixture constantly until thick. You can see in the picture below, hopefully, the desired thickness…
Remove from heat and stir in 1 Tablespoon butter until melted. Allow mixture to cool.
Fold in cool whip, then add in sliced bananas. Enjoy!

This is also a perfect summer treat. Perfect for any cookout or camping trip.
You can make the “base” of this ahead of time and then just stir in the bananas right before serving to prevent browning. Also, if they’re any leftovers just try to eat all the bananas out of the salad to prevent browning.

- Combine the egg, sugar, flour, salt, and vinegar/water mixture. Cook over medium/high heat, stirring constantly until mixture is thickened.
- Remove from heat and stir in butter until melted.
- Allow mixture to cool.
- Fold in Cool Whip, then stir in sliced bananas right before serving.
