Summer will be here soon and that means cherry season!!! These Cherry Pie Bars are the perfect summer dessert!
How are things going where you are? We are all hanging in here as well as can be expected. The girls are beginning to miss their friends and teachers. They’re also missing school and sports! I’m missing our normal routine and from someone who doesn’t do well without a normal routine, we’re slowly settling into our new normal. The sunshine and warmer temps have definitely helped our spirits and, luckily, the girls can get outside and play in the yard, ride bikes, etc. We’ve also been busy doing some small projects around the house and we’ve been busy crafting and have some fun things planned up our sleeves.
We also started planting corn yesterday, so that helps lift our spirits a little bit. I actually just heard from our Lieutenant Governor that Indiana has 2% of their corn crop and 4% of their bean crop in the ground. Still a long way to go, but we’ll get there! Much of life is a little scary right now, such is the life of agriculture currently. Ag life always seems to be a bit of a gamble. When you put that seed in the ground, you never know what the weather is going to do. We’ve experienced drought, excess rain, plummeting prices and yet we’re still here doing what we love.
This year seems to be a little more challenging. It’s time to get the planters rolling, but everything is changing day-by-day, so now more than ever we have to lean on our faith. We will get through this and, hopefully, come out a little…A LOT…stronger than before. I will continue to keep you all in my prayers. Please continue to pray for the health and safety of our farmers who have had a very stressful few years and things just seem to keep snowballing!

Cherry Pie Bars
You will need:
For the bars:
1 Cup softened butter
1 3/4 Cup sugar
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
1/4 teaspoon almond extract
2 1/2 Cup All-Purpose Flour
21 oz. can cherry pie filling
Glaze:
1 cup powdered sugar
1/2 teaspoon vanilla
1 Tablespoon milk (or more until desired consistency is reached. The mixture should be thick but still pour-able…or drizz-able)
Grease a 9×13 pan and preheat oven to 350 degrees. Cream butter, salt, and sugar until fluffy.
Add in the vanilla, almond extracts, and eggs and mix until combined.
Gradually add in the flour. Then spread a thin layer of batter into the greased pan. It should be about 1/4″ thick. Reserve the rest of the batter for the topping.
Spread the pie filling evenly over the batter.
Drop spoonfuls of the remaining batter over the cherry pie filling. Bake for 25 minutes or until golden brown. Cool completely.
Whisk together the powdered sugar, vanilla and milk together to desired consistency and drizzle over cooled bars.

Ingredients

- 1 Cup 2 sticks softened butter
- 1 3/4 Cup sugar
- 1/2 teaspoon salt
- 3 eggs
- 1 teaspoon vanilla
- 1/4 teaspoonalmond extract
- 2 1/2 cupall purpose flour
- 21 oz cancherry pie filling
Glaze:
- 1 Cuppowdered sugar
- 1/2 teaspoonvanilla
- 1 Tablespoon milk or more until desired consistency is reached. Glaze should be thick, but still drizz-able
Instructions
- Grease a 9x13 pan and preheat oven to 350 degrees.
- Cream the butter, salt, and sugar until fluffy.
- Add in vanilla, almond extract, and eggs and mix until combined.
- Gradually add in flour and mix well.
- Spread thin layer, about 1/4", into greased pan, reserving rest of batter for topping.
- Top evenly with pie filling.
- Drop spoonfuls of remaining batter over filling.
- Bake 25 minutes or until golden brown.
- Cool completely
Glaze
- Whisk together the powdered sugar, vanilla, and milk to desired consistency.
- Drizzle over top of cooled bars.
