Do you love tacos..maybe you live for Taco Tuesday? Tacos are definitely a favorite in our house and one of my favorite “go-tos.” I try to keep all the ingredients in stock for those nights when I can’t think of anything to fix, or when I need a quick meal. These Crockpot Taco Joes are a fun twist on the traditional taco.
We could eat these once a week…sometimes we do! Our oldest looooves them!
Not only are they delicious, but they are also so easy to whip up!
Trust me, I need some quick and easy meals this time of year! Between running kids to practices along with the everyday stuff, plus they guys are busy in the fields. We finished chopping silage a few weeks ago. Silage is when the corn is harvested when it is still green. We keep all parts of the corn and feed it to our cattle.
We have been harvesting dry corn for a couple days now. What we don’t chop and turn into silage, we let dry in the field then harvest. We only keep the corn kernels and everything else from the corn plant comes out the back of the combine and back onto the field to break down over the winter.
Crockpot Taco Joes
First, brown the hamburger and drain. Then place the hamburger in a crockpot and stir in all the other ingredients. Cover and cook on low for 4-6 hours. In a hurry? Crank up the heat to high for an hour or two.
It’s football season and these Crockpot Taco Joes are perfect for tailgating! Hosting a party? They are definitely perfect for feeding a crowd as it makes about 25 sandwiches. This recipe can easily be cut in half, if needed…or make it all at once and enjoy leftovers for a couple meals.
Serve them up with several different garnishing options and your guests or family members can fix them however they please!

Crockpot Taco Joes
Ingredients
- 3 pounds ground beef browned and drained
- 16 ounce can refried beans
- 10 ounce can enchilada sauce
- 1-1/4 oz. package taco seasoning
- 16 ounce jar salsa
- Hot dog buns
- Garnish: shredded cheese shredded lettuce, sour cream, tomatoes, taco sauce, etc.
Instructions
- Brown hamburger and drain. Place in slow cooker.
- Stir in refried beans, enchilada sauce, seasoning mix, and salsa.
- Cover and cook on low setting for 4 to 6 hours.
- To serve: fill each bun with 1/3 Cup beef mixture; garnish as desired.
