I love a good salad! Since I’m not much of a sweet eater. I know. Hard to believe considering I love to bake and have this here blog, but if I have to choose between sweet or salty, I will always choose salty. Always. That being said, I love salad so much I’ve been known to eat salad for dessert! My sister-in-law always gets a good laugh out of it.
Anyway, I love salad in any shape or form! What I love most about salads is they don’t even have to be healthy or have lettuce in them in order to be classified as a “salad!” Toss a bunch of stuff in a bowl, give it a good stir….ta-da…SALAD!
This Frito Corn Salad is perfect for summer cookouts! Everyone will be begging you for the recipe. My family of 5 devoured it, it was that good!
Frito Corn Salad
You will need:
2 15 ounce cans sweet corn, drained (I used frozen sweet corn from our garden. 1 quart size bag, so you can use that if you have it, just drain it)
1/2 Cup chopped red onion
1 Cup chopped green pepper
2/3 cup mayonnaise
2/3 Cup sour cream
2 Cups mild shredded cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1- 9.25 ounce bag Chili Cheese Fritos
Toss everything EXCEPT Fritos in a bowl and stir well to combine. Refrigerate for about 1-2 hours before serving. Right before serving, stir in Fritos. If you stir them in too soon they will get soggy.
Have fun with this recipe. This is one of those recipes that you can experiment with. Add in some red peppers, some cilantro, or different flavors of corn for an added twist. Like it spicy? Add in some jalapenos or a couple dashes of hot sauce. The possibilities are endless, but one things for sure-once you bring this salad to the party, you will be designated to bring it to every party from there on out!

Ingredients
- 2 15 oz. cans sweet corn drained
- 1/2 Cup chopped red onion
- 1 Cup chopped green pepper
- 2/3 Cupmayonnaise
- 2/3 Cup sour cream
- 2 Cups shredded mild cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 9.25 ounce bag chili cheese Fritos
Instructions
- Toss all ingredients EXCEPT Fritos in a bowl and stir well to combine.
- Refrigerate for at least 1-2 hours, or until ready to serve.
- Stir in Fritos right before serving. If you stir them in too soon, they will get soggy before serving.
- This is a very versatile dish and you can experiment with it. Add in some red peppers or some cilantro. If you like spicy, add in a couple dashes of hot sauce or jalapeno.
