Are you always trying to figure out something different to make while camping or hosting a cookout? Maybe your grilling over a fire for a holiday weekend and don’t want the usual hamburgers, brats, hot dogs or steaks? While those are all yummy and quite popular, add some variety to your next cookout with this Hobo Casserole with Smoked Sausage.
We bought a camper about 4 years ago, so I’m constantly trying to find new recipes to fix. I didn’t grow up camping, so I’ve had to learn the ins and outs as we go and I’m always looking for ways to make things a little easier. Some people say that if you camp in an RV then it’s not really camping, but I beg to differ. No matter if you choose to camp in a tent, or in an RV…it’s still camping. Sometimes I wonder why the heck I agreed to buy a camper, but it really is a lot of friend. We usually camp with our friends who also have kids the same age as our girls, so they have a blast and I really do enjoy it even if I don’t always act like it…especially when we are packing up to leave, setting up the campsite, or unpacking! In all honesty, it’s about the only time we have a chance to relax as a family, so I guess for that I am thankful!
I love the traditional hot dogs and hamburgers, but sometimes those get a little old! This Hobo Casserole with Smoked Sausage is easy to whip up. You can make individual foil packets like my friend Liz at the Farmwife Cooks does with her Grilled Sausage and Hobo Packets, but when I’m feeding a crowd, that takes a lot of time to make individual packets, so I just toss everything in a 9×13 aluminum pan and throw it on the fire!
Hobo Casserole With Smoked Sausage
You will need:
2 14 ounce packages Eckrich Skinless Smoked Sausage links, sliced or chopped based on preference
1 lb baby carrots (you can also use whole, chopped carrots but I like the convenience of the baby carrots when we are camping)
1 head cabbage, chopped
5-6 medium potatoes, cubed
Salt and pepper to taste
1 stick of butter, sliced
Note: You cannot mess up the measurements in this recipe. Not a fan of cabbage? It’s ok, just leave it out! Prefer more carrots over potatoes and vice versa, just go with it. Do you like celery? Toss it in and see what happens!
Grease a 9×13 pan with cooking spray (If you’re cooking over a fire, use an aluminum pan) and add a bit of water to the bottom. Maybe 1/4″ in the bottom just to help minimize any sticking. Toss all the ingredients in the pan. Sprinkle with salt and pepper. More can be added later also to taste. Add the sliced butter and give it a good stir. Cover with aluminum foil. If your cooking it over a fire, cook for about 45 minutes over medium heat , checking and stirring often, until potatoes and carrots are fork tender. If you’re cooking it in an oven, cook at 400 degrees for about one hour, or until potatoes and carrots are fork tender.
So simple. Minimal mess. So good!
