It’s summer and it’s hot. This Marinated Fresh Fruit Salad from Gooseberry Patch’s cookbook, Tastes Like Home, is the perfect refreshing summer snack.

On the farm we finished up baling straw a week or so ago.
The straw is what is left over after the combine harvests the wheat. We use it as bedding for our cattle.
The wheat is usually ready around the Fourth of July. I can remember growing up, always wanting to go to a Fourth of July party, but I usually ended up driving the baler. Sometimes we would be finished in time to make it to a party, but that was a rare occasion.
Sometimes farmers will plant soybeans in the wheat stubble. This is called double cropping because you can get two crops off one field in a single year. So, the straw needs to be baled as soon as possible that way the soybeans can be planted.
We are also busy spraying the soybeans to help keep the weeds under control, so the soybeans will be more productive.
The county fair was two weeks ago and while we had a ton of fun….it was hot!!!
This marinated fresh fruit salad would have been fantastic for that that picnic lunch I packed on Tuesday for the hog show. Oh well!!
Marinated Fresh Fruit Salad
This salad is so easy to make. Just dump the fruit in a bowl, add the pineapple juice, lemon juice, and honey, stir and that is it!!
You can add whatever fruit you want. Don’t like blueberries? No problem, leave them out or substitute for something else.
This fruit salad would be perfect for a cookout or pool party! The perfect summer potluck side dish!
Marinated Fresh Fruit Salad
Ingredients
- 2 Cups strawberries hulled, halved, and quartered
- 2 Cups seedless green grapes
- 2 Cups seedless red grapes
- 2 Cups blueberries
- 2 11- ounce cans mandarin oranges drained
- 20 ounce can pineapple chunks drained and 1/4 Cup juice reserved.
Marinade
- 1/4 Cup reserved pineapple juice
- 1/4 Cup lemon juice
- 1/4 Cup honey
Instructions
- Combine all fruit in a large serving bowl. Drizzle marinade over fruit; toss gently to combine.
- Cover and refrigerate for several hours to overnight. Toss again before serving.
