There’s nothing like the fresh taste a salad that comes straight from the garden. This Tomato Cucumber Salad tastes great all year long, especially when the main ingredients come straight from your very own garden!
This salad only requires a few ingredients and you will have it whipped up in no time!
How are things going in your neck of the woods? Things are same old, same old here. We’ve been in school for about 6 weeks now! Thank goodness. I don’t think anyone guessed we would make it this far. I hate to say too much because I don’t want to jinx ourselves. I know everyone’s opinions on the school matter are all over the board and I respect each and every decision that was made as everyone had to do what was best for their family, but I am so glad our girls have gone back to school. I love having my girls home, and as uneasy as I was about them going back, I’m glad we made this decision for our family.
Sports are still going on. Again, thank goodness! Volleyball is still running strong and we have a few weeks left of it. Mel started basketball over the weekend. They got to begin their season at home, which is always fun. They won their first game 29-20 and the second game was cancelled because the opposing team forfeited. Mel almost fouled out, so maybe she should tone down the defense a little bit:)
We also started harvest today. I’m sure I’ll be sharing pictures of that in later posts. I have officially entered single parent mode. I have the deepest appreciation for parents who do this 365 days a year because it is hard managing everything on your own especially with kids busy schedules. Thankful for people who help out and I always hope I don’t forget a kid somewhere:)

Now back to this Tomato Cucumber Salad…
Tomato Cucumber Salad
You will need:
2 Tablespoons Olive Oil
1 Tablespoon Red Wine Vinegar
1/4 teaspoon black pepper
1 teaspoon salt
1/2 Cup purple onion, diced
5 Tomatoes, diced or wedged
3 small cucumbers, diced
Cut up all the veggies and spices. Mix them all together in a large bowl. Cover and refrigerate for at least an hour. Serve within a few days.
This salad would be great for your next cookout or get together!

Ingredients
- 2 Tablespoons Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup purple onions purple
- 5 to matoes diced or wedged
- 3 small cucumbers diced
Instructions
- Cut up the veggies and place in a large bowl.
- Add the spices and mix well.
- Cover and refrigerate for at least one hour.
- Serve within 3 days.
